Nobody wants to be the reason it's rescheduled
People will quietly not reply rather than say a date doesn't work. A tick-box poll is low enough stakes that they respond.
You need lead time, so ask early
Six months out for anything involving flights. A poll makes early asking cheap.
Set it up in three steps

Three to five, spread across the year. Include at least one holiday weekend if people are travelling far.
Share it wherever people are
Email, group chats, a Facebook group. Anyone with the link can respond without an account.
Lock it in early
Set a closing date, then book. Flights and accommodation get harder the longer you leave it.
